HOSPITALITY & CATERING CURRICULUM

 

 

OVERVIEW OF KEY STAGE 3 CURRICULUM

As part of their work with food, students learn how to cook, cultural factors linked to dishes and apply the principles of nutrition and healthy eating. Instilling a love of cooking in students opens the door to one of the great expressions of human creativity. Learning how to cook is a crucial life skill that enables students to feed themselves and others affordably and well, now and in later life. Dishes include fruit salad, american style pancakes, vegetable curry, pizza, sushi, oven baked spiced chicken and macaroni cheese.

What will I study?

Unit One 

  • Different types of provisions and services in the industry
  • How hospitality and catering provisions operate- front and back of house
  • Health and Safety in Hospitality and Catering
  • Food safety and hygiene in Hospitality and Catering

Unit  Two

  • The Importance of Nutrition/ cooking methods and how they impact nutritional health
  • Factors affecting Menu Planning
  • The skills and techniques of preparation, cooking and presentation of dishes
  • Evaluation and reviewing cooking and presentation of dishes

How and when will I be assessed?

The qualification has two units:

Unit 1 (written exam) is 1 hr 20 mins and this focuses on the way the hospitality and catering industry works and is managed. (40%)

Unit 2 - Hospitality and Catering in Action - this unit is designed as controlled assessment tasks that are based on a practical scenario. (60%)

Careers that studying Hospitality and Catering can lead to:

Dietician- produce specific eating plans for a range of reasons including sports, allergies or health issues.

Food Scientist- Develop products for customers ensuring nutritional standards, longevity and taste.

Environmental Health Officer - Checks and inspects that establishments are operating a clean and hygienic business for safe food and customers.

EXTRACURRICULAR OPPORTUNITIES

We offer a Pudding Club for those that enter Year 7. This operates on a Friday after school and it is for those of you that want to learn how to make yummy and sweet puddings for all the family.

Catering Events - we will be organising catering events to help develop and practise their hospitality and catering skills- front and back of house.
